How to Make the Best Homemade Potato Salad: Tips and Tricks

This easy Potato Salad recipe makes the best classic potato salad. I used my Instant Pot to make the potatoes and eggs. You can choose to use the stovetop method also.

This makes a good side dish with grilled meats, ribs, sandwiches, baked chicken and more! You can also enjoy it by itself.
Potato Salad
Ingredients
2 lbs Yukon Gold potatoes, cut into 3/4 inch pieces, peeling is optional
1 tsp salt
Chicken Broth, enough to cover the potatoes when boiling
3/4 cup mayonnaise
1/4 cup sweet pickle relish
2 Tbsp apple cider vinegar
1 Tbsp Dijon mustard
1 tsp celery seed
1/2 tsp salt
1/4 tsp pepper
1/3 cup finely chopped sweet onion
3 eggs
Paprika - optional topping
Directions
Peel and slice potatoes. Put in Instant Pot. Add 1 tsp salt. Wash eggs. Place the eggs on top of the potatoes. Add enough Chicken Stock to cover the potatoes. Pressure cook for 6 minutes.
While the potatoes are cooking mix mayonnaise, relish, vinegar, mustard, celery seed, 1/2 tsp salt, pepper and onion in a bowl then whisk until combined.
Once the Instant Pot is done place eggs in cold water. Drain potatoes. Let the potatoes cool in the refrigerator. Peel and chop eggs then add to the mixture in the bowl.
Once the potatoes are cool put them in the bowl and mix together.
Sprinkle a little paprika on top then serve.
I have found if you let the potatoes cool then you will not end up with a watery potato salad. Let me know how it works.
