Quick and Easy Casserole to make on a weeknight. You may also prepare it up to 24 hours in advance before cooking it then pop it in the oven.

**Recipe: Million Dollar Chicken Casserole for a Delicious Weeknight Dinner**

I have decided to do a series of Chicken Casseroles on YouTube. I have seen so many recipes that I thought I would seek the best one I could find, since the kids said I am not allowed to reveal my recipe. This recipe has a few ingredients I have never seen in chicken casserole. I was very interested to see how it would turn out. It tasted delicious.

This will serve a family of 4-6 depending on how many servings of vegetables you serve. I made green beans and served them as a side dish. They go well together.

Ingredients

  • 4 cups boneless skinless chicken (I used a Rotisserie Chicken)

  • 4 oz cream cheese

  • 1 cup cottage cheese

  • 1/2 cup sour cream

  • 10.75 oz cream of chicken soup

  • 1/2 tsp garlic powder

  • 3/4 tsp onion powder

  • 1 sleeve Ritz Crackers

  • 1 tsp dried parsley (optional)

  • 4 Tbsp butter

Let’s Get Started

  1. Preheat the oven to 350 degrees and spray a casserole dish with non-stick cooking spray.

  2. In a large bowl add the cream cheese, cottage cheese, sour cream, soup, garlic powder and onion powder. Mix to combine.

  3. Add the shredded chicken and stir to combine. Pour the mixture into the prepared pan.

  4. Crush the crackers and add to a bowl. Pour in the melted butter and mix.

  5. Sprinkle the casserole with the crushed cracker mixture.

  6. Bake uncovered for 40 minutes until hot and bubbly.

  7. Garnish with parsley if desired.

Serve with your favorite vegetable and enjoy!
