The Perfect Comfort Food: SOS and Scrambled Eggs (Chipped Beef with Gravy) Recipe

Veteran's Day is very special to me. I have many in my who have served in the military. My husband, John, my dad, 2 nephews, both of my grandfathers and many uncles and cousins. I would like to take this time to thank each and every man and woman who have served our country. I thank them for the freedoms we have. I am able to write blogs. I am able to go to church. I am able to vote. Thank you!
In the Marine Corp I know one thing they were served a lot of and it is SOS. I am not sure if the other branches serve this but I know the Marines were.
I added scrambled eggs because I made up a recipe to make them creamy. I love soft scramble to where they almost melt in your mouth. This has become one of Noah's favorite dish to make for him. Noah is my 10 year old grandson and he is not afraid to tell you how he feels about a dish.

Come join me for this delicious breakfast. Sometimes we have breakfast for supper. This is a fill you up kind of meal for any time of the day. This recipe is for 4. Feel free to scale down if you need to.
Ingredients for both
8 ounces Buddig original beef
1/4 cup of butter
1/4 cup all purpose flour
1/2 tsp fresh ground pepper
Few pinches of cayenne
2 cups of milk
8 eggs
2 pats of butter
2 ounces of cream cheese - cut into pieces
8 slices of sourdough toasted
Step 1: Let’s Get Started - Creamed Chipped Beef
Slice the beef in bite sized pieces.
Melt the butter in a skillet over medium low heat. Whisk in the flour. Cook for 2 to 3 minutes; whisking constantly. Sprinkle in the black pepper and the cayenne pepper. Slowly whisk in the milk until smooth and creamy.
Add the chopped beef and simmer for 3-5 minutes. Salt and pepper to taste. Remove from heat and cover until the eggs are done.
Step 2: Time for Soft Scrambled Eggs
Melt a couple of pats of butter in a skillet over medium low heat.
Meanwhile, crack the eggs into a medium bowl. Whisk until frothy. This is a very important step.
Once the butter is melted add the eggs to the skillet. This is a slow process. Do not rush. With a regular spatula or fish spatula move the eggs from the outside to the center.. Continue to do this until almost done.
The eggs should still be runny then add the cream cheese. Dot it all over the top of the eggs. Continue to move the eggs from the outside into the center until the cream cheese melts.
Salt and pepper to taste.
Step 3: Time to build
Toast your bread. Put the toast on your plate and using a ladle pour the amount of Creamed Chipped Beef you want over the toast.
Place the Soft Scrambled Eggs on your plate.
Eat and enjoy.
I have worked for a while on different recipes and ideas for the eggs. Once you perfect this technique you will never cook scrambled eggs any differently. Please do not add the salt and pepper while the eggs are cooking. Salt will make them tough and pepper will give them a grayish look. The most important thing is to not rush the process. Take your time. You won't regret it.
